It’s that time of year again. The time you spend hours on end in the kitchen, singing along with all your favourite Christmas carols, flour and sugar all over you and the kitchen, with a huge smile on your face! It’s cookie making time of course!

This recipe is great for the holidays as a nice treat to have with a cup of herbal tea or to share with family and friends at your festive celebrations. It is gluten-free and free of nasty refined sugars (unless you decide to add the sprinkles). Instead of refined white sugar or brown sugar this recipe calls for coconut sugar, which is low on the glycemic index and better for diabetics. It also calls for unpasteurized, local honey which adds great sweetness along with anti-microbial and anti-bacterial properties. I decided to use butter today but you can try the recipe with coconut oil instead to make it vegan.

Pull out your mixers and cookie cutters and enjoy!

Recipe

1/2 cup organic butter (softened)

1/2 cup coconut sugar

2 Tbsp almond milk

1 tsp vanilla

1/4 cup unpasteurized, local honey

2 cups gluten-free flour blend

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

 

Gluten Free Flour Blend

4 cups brown rice flour

1 1/3 cups potato starch

2/3 cup tapioca flour

4 tsp xanthan gum

 

Icing

2 Tbsp softened coconut oil

2 Tbsp unpasteurized, local honey

1 tsp vanilla

Directions

  1. In a bowl cream together butter and sugar with a hand mixer
  2. Add milk, vanilla and honey and beat again
  3. In a separate bowl combine flour, baking powder, baking soda and salt
  4. Slowly add dry mix to the wet and combine till a dough is formed
  5. Wrap the dough and let stand in the fridge for an hour
  6. Pre-heat oven to 350 degrees and roll out dough on a well floured surface
  7. Add festive sprinkles if you are not trying to avoid refined sugar (it takes them to the next level)
  8. Cut cookie shapes and bake for 8-10 minutes
