Hope everyone had an amazing weekend. The spring weather is nearly upon us, I can feel it!
Sunday is one of my favourite days! Wake up late, lounge in your pjs and indulge in brunch. What could be better than that? Perhaps a plate loaded with Paleo pancakes!
For those of you who are unfamiliar with paleo, it is essential a diet that does not contain grains. It is more in touch with the caveman way of eating.
These pancakes are filling, delicious, and no one will ever know they’re grain-free.
1/4 cup + 2 Tbsp Coconut flour
1/4 cup tapioca starch
1/2 tsp baking soda
2 Tbsp sugar
1/2 cup + 1 Tbsp Dairy-free milk
1/2 Tbsp apple cider vinegar
1/4 cup grape seed oil
2 tsp vanilla
Sift dry ingredients into a large mixing bowl.
Whisk together wet ingredients in a medium mixing bowl.
Slowly add dry ingredients to the wet and mix until well combined.
Pour 1/4 cup of the batter onto a frying pan over low heat. Cook until bubbles stop forming and the bottom half begins to set. Gently and quickly flip and cook the other side, another couple minutes.
Pancakes with be light and fragile, be gently.
Serve warm with maple syrup and fresh berries and enjoy!
