Tonight’s dinner was a quick and super easy Asian inspired bowl of veggies and hoisin chicken!
This meal is great to have in your back pocket on those nights where you need an easy meal in under 30 minutes.
To prep: simply chop your favourite stir fry veggies. I used broccoli, onion, bell peppers, and bean sprouts. Then thinly slice chicken breast (helps to cook quickly). Use 1/2 to 1 breast per person.
To cook: heat 2 Tbsp grape seed oil in two separate frying pans over medium low heat.
Cook chicken in one and your stir fry veggies in the other. When chicken is cooked drizzle 2-4 Tbsp hoisin sauce over and toss to coat.
As for the veggies, drizzle with Tamari sauce (gluten-free soy sauce) and 1 Tbsp grated ginger and toss to coat.
Super simple and incredibly delicious!
