Delightfully Fluffy Cupcakes

Last weekend my dad was visiting some family up north and wanted to bring something special. He recruited me for some help and I got straight to work. I headed to the kitchen, grabbed my trusty recipe journal and started creating. The product was this delicious fluffy cupcake recipe!

I hope to enjoy the cupcakes as much as my family…they were a huge hit!

Oh yeah…they’re gluten-free and vegan, but no one will be able to tell. It’s our little secret, sshhh!

Ingredients:

2 cups gluten-free flour mix

4 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/3 apple sauce

1 banana, mashed

1 1/4 cup raw sugar

1 cup canned coconut milk

2 Tbsp apple cider vinegar

2 1/2 tsp vanilla

Directions:

In a measuring cup combine coconut milk and apple cider vinegar. Let stand for 5 minutes to slightly curdle.

In a large bowl combine apple sauce, mashed banana, sugar, and vanilla. Mix until well combined. Add coconut milk and stir to combine.

In a separate mixing bowl sift together gluten-free flour, baking powder, baking soda and salt.

Add dry ingredients to wet and mix until we’ll combined.

Divide into lined muffin tins and bake at 350 degrees for approx. 20 minutes, or until inserted toothpick comes out clean.

Frosting:

I made a seven minute fat free frosting but you can use your favourite frosting recipe. Vanilla, maple and even chocolate would be delicious!

7 minute frosting:

1 1/4 cup raw sugar

1/3 cup water

2 egg whites

1/2 tsp white vinegar

pinch of salt

2 tsp vanilla

To make frosting combine water and sugar in a sauce pot and bring to a gentle simmer. Heat until sugar is dissolved and set aside. Add egg whites, vinegar and salt to a large mixing bowl and get out your electric mixer. Trust me you do not want to perform the next step by hand! Turn mixer on to low and beat egg whites until light and frothy. Slowly pour in sugar mixture with electric mixer on low. Once sugar water is added increase speed and beat for about 5-7 minutes, or until the frosting is to your preferred consistency. Add in vanilla and give it one last whip.

This frosting is the perfect combination of sweet and fluffy. It’s almost like topping you cupcakes with marshmallow…who wouldn’t love that?

Decorate to your hearts desire…sprinkles are always a fun touch!
