Baby it’s cold outside! The chilly weather is coming and I’ve got you covered. This delicious and nutritious soup is the perfect quick and easy weeknight dinner.
Its takes under 30 minutes to make and is the perfect combination of protein and greens, with a little spice.
All you need is:
1 rotisserie chicken (pre-cooked from the store), chopped
2 Tbsp olive oil
1 small onion, diced
Salt and pepper to taste
1 tsp dried thyme
1/2 tsp dried rosemary
1/2 tsp paprika
1/2 tsp onion powder
1/2-1 tsp chilli flakes
1 tsp tomato paste
5-6 cups chicken stock (about 1 1/2 cartons)
3 cups water
1 can white bean (I used kidney)
2 cups kale, chopped
2 Tbsp chopped parsley
In a large soup pot heat olive oil and sauté onions until soft, about 5 minutes. Season with salt, pepper, thyme, rosemary, paprika, onion powder, chilli flakes and tomato paste. Cook another 2 minutes, stirring constantly.
Add stock and water and bring to a high simmer. Add beans, kale and 3/4 of the chicken.
Simmer for 15 minutes, sprinkle in parsley and serve!
